Mini White Chocolate Blondies

We are well into Christmas cookie obsession here at Casa Byn, and when I say we, I mean me, my blogs, and Danielle via Google Video Chat.

First though, a quick post about some cute mini White Chocolate Blondies I made for Tatiana’s daughter’s 1st Birthday party last month. Tatiana calls these ‘mini muffins’ and pretty much asks for them every time we get together. The first time we met (almost 10 years ago!), hanging out with our mutual friends Lill and Kristin, I brought these with me. We’ve been friends since then, and I’m pretty sure that’s 75% of the reason why.

So yes, again with the Blondies. These are super quick, and easy to make, like their Chocolate Brownie cousins. I made a fast white chocolate ganache, which I tinted purple (looks kind of gray-ish, because white chocolate isn’t pure white), chilled and piped on top with a squeeze bottle to make the letters.

Mini White Chocolate Blondies

Source: Adapted from Bake or Break 

Ingredients:

1 cup butter

4 oz white chocolate, chopped (or use chocolate chips)

3/4 cup brown sugar

3/4 cup white sugar

3 eggs

1 tsp vanilla extract

1 1/2 cups flour

  1. Preheat oven to 350, and place a bunch of mini muffin liners on a cookie sheet (mini muffin tins are nice to have, but not necessary).
  2. Melt butter and white chocolate in the microwave or over a double boiler.
  3. Stir in sugars, then eggs, then vanilla.
  4. Fold in flour.
  5. Spoon batter into liners and bake for about 15 minutes until golden and a toothpick inserted in the centre comes out clean. Cool before decorating.
  6. Optional: For white chocolate ganache, put 7oz chopped white chocolate or white chocolate chips in a bowl. Heat 1/4 cup cream in the microwave until hot, and pour over the white chocolate. Wait a couple minutes (the cream will melt the chocolate), then whisk until smooth. Add food colouring if you want. Place in the fridge to chill while you go to the movies (Due Date – blah). Pour into a squeeze bottle or ziploc bag (snip the corner) and pipe on letters or in a swirl. I normally just put a few white chocolate chips on the top when they come out of the oven instead of the ganache.

    Thank you Robyn, we love you!

    Is this one of those “give a man a fish… teach a man to fish” things? Because you know I mustn’t bake: I don’t have the skills and things come out terribly, but if I were to get half as good as you at baking, I’d be making sweets 24/7 which would be disastrous for my clothes which are already bracing for Christmas time :))
