Cookie Dough Icing

Last month I told Kristine’s sister Mae that I would make her whatever treat she wanted for her birthday when I got back from my work trip. She said her most favourite thing I’ve ever made was the Chocolate Chip Cookie Dough Cupcakes from last year.

When I made those in October for my birthday, I topped them with a chocolate cream cheese icing for a little contrast, but I realize now that was a huge mistake. For Mae’s birthday cupcakes, I went back to the original recipe, and made this cookie dough icing. I’m now obsessed.

There’s a little bit of flour in the icing, and it doesn’t fully smooth out, but has a bit of a grainy texture, which on first thought sounds weird, but this is what makes it taste like cookie dough. I can already picture my birthday cake for this year – chocolate cake, covered in this icing, sprinkled with chocolate chips! Maybe a layer of cheesecake in the middle? What? Don’t you start thinking about your birthday cake three months in advance, too?

Cookie Dough Icing

Ingredients

3/4 cup butter (1 1/2 sticks), room temperature

1/4 cup + 2 tbsp brown sugar

1 3/4 cup icing sugar

1/2 cup flour

1/4 tsp salt

1 1/2 tbsp milk

1 1/4 tsp vanilla extract

Directions

  1. Beat together butter and sugar until creamy. Beat in icing sugar until smooth, then flour and salt. Add milk and vanilla until smooth and everything is combined.

    lalalaalalike! I’m so curious to know what’s inside of the cupcakes? do you carve out the center and put the icing iN?

    either way, i’m getting 1 of these bad boys the next time you bake them!
